This recipe takes minimal time to whip up and is full of healthy additions like peanut butter, pecans, and chia seeds to keep you full and energized. Let’s not forget the added benefit of pumpkin puree to make these energy bites all the more delightful!

My love for pumpkin helped inspire the creation of this recipe. Please know I am not that pumpkin fanatic that loves pumpkin spice everything – trust me, I love pumpkin, but it has its place. There are certain recipes and creations nowadays of pumpkin pie spice that I feel may have been taken a little too far. However, I will try to find a place to use pumpkin and make it tasty! In addition, there is a recipe from the Blue Zones (Blueberry Muffin Bites) that I make which uses oats, blueberries and maple syrup.. and I got to thinking why not make a pumpkin energy bite? Therefore this recipe was born.

I love snacking, especially when I am in my third trimester of being pregnant haha. The more I see what store bought snack ingredients consist of, the more I grow displeased. That is not even taking the price of store bought snacks into consideration. This leads me to be on the constant look out for snack recipes that will be of interest for my family and I. And I wanted to sneak in a few of my own creations.
Fall Flavors: Pumpkin, pecan, maple syrup, all the famous flavors of fall and winter. Makes them taste nostalgic for the fall and winter but are great year around!
Quick & Easy: One bowl, no baking, can be prepared in less than ten minutes! These pumpkin energy bites are super easy and take minimal effort and time to prepare. They last a while in the refrigerator, making them a great prep ahead snack.
Kid-Friendly: If you have a child who loves to be in the kitchen with you, these are a great snack to have them help you with. Let them dump the ingredients in, help stir and even assist with the rolling of the individual bites!
Ingredients
How to Make Pumpkin Energy Bites
Step 1: Add all ingredients into a large bowl.
- 1 1/2 cup oats
- 1/2 cup pumpkin puree
- 1 tablespoon chia seed
- 1/2 cup peanut butter
- 3 tablespoon maple syrup
- 1/4 cup chopped pecans, finely chopped
- 1/4 teaspoon cinnamon
- 3/4 teaspoon pumpkin pie spice
- 1 tablespoon mini chocolate chips
- Pinch of salt
Step 2: Mix all ingredients together thoroughly.
Step 3: Roll into balls, each ball being about 1 tbsp each. This will result in about 32 balls. However, if you like more bite size or have smaller kids, feel free to roll into smaller balls.
Step 4: After rolling these energy bites, place in an air-tight container for up to 7-10 days.

Tips
- Make sure when you are using canned pumpkin it is “pumpkin puree” and not “pumpkin pie filling”. If you are using fresh pumpkin, wash throughly and bake and make your own pumpkin puree. Canned pumpkin puree is safe to eat raw because it has been baked during the canning process.
- Feel free to substitute the mini chocolate chips for another crushed nut or omit them if desired. The maple syrup will sweeten these enough!
- Make sure to crush pecans very finely to make the rolling of these energy bites much easier.
